How do I send a confidential email if another has inbox rights?

Some assistants have rights to their bosses' Outlook inboxes. However, there
are times when a confidential email needs to be sent but we don't want the
assistant to see it. At a prior employment they used Novell and they said
they could assign proxy rights for each email sent. Does Outlook 2003 have
the same capability?
 
Have you tried marking the email "private"? The setting is in the Options
button inside the email. Write the email, click Options and set it to
Private.
