How do I recover outlook information?

I was told I had a virus and ran a rescue and recovery on my laptop. I
copied my entire C drive to an external HD and reset my laptop to the state
it was in when I received it. How do I find all of my saved emails and
contact information? Can I recover my favorites for IE too?

By whom or by what? Did you not have good antivirus software?

This seems like a very severe fix for something that likely didn't require
it, btw.

Your calendar data, as well as messages, tasks, notes, contacts, etc. are
stored in a file with a .PST extension. Look here for all the information
you need on backup and restoration of Outlook data:

IE too?

They're probably in your old documents & settings\username folder, and
you'll have to take ownership if you used NTFS...
