I want to secure a folder I am sending via email - I know how to protect an
individual file with a password but I can't figure out how to add a password
to an entire folder. can this be done?

If you use Winzip to zip the folder you should be able to set a password on
the archive.

Most zip programs allow you to password-protect the zip file. I don't know
if the built-in WIndows zipper can do that. Even if it can, however, it's a
well-known fact that zip passwords are easily broken by brute-force methods.
They really aren't much safer that non-protected files. You'd be more
secure if you and your correspondent acquired digital certificates and
encrypted the messages that way.
