How do I permanently change the color of my signature in Outlook?

My signature keeps coming up yellow. I have tried going to the signature
formatting, and it says black, but it does not show up black on my emails.

I edited my signature's HTML file with Notepad and entered

<FONT face="Arial" color="black" size=2>

just above the text of the signature.
