How do I open up multiple docs in entirely separate windows?

My word used to allow this; I'd open up more than one word doc and it opens
up multiple instances of word. Now it is only one instance, and if I close
the doc I close all of Word (clicking at the top right corner). I don't like
this behavior; I want to go back to the way it was before. Please advise.

In Word, click on Tools | Options | View | check the "Windows in Taskbar" box
| OK.
 
But note that you still have only one instance of Word running, just a
separate window for each document.
