How do I mark my changes when sending a reply?

I used to be able to mark up an email and have my Name shown and my text be
in a different color. I cannot see where to turn this on in Outlook 2007.

tools > Options > Preferences Tab > Email options button > On Replies and
Forwards, bottom half of screen
