How do I get Outlook 2003 back once I have decided not to go with

I got the trial edition of Office 2007. I have decided not to purchase it.

Problem is, Outlook 2007 became my new email software by default and
apparently did away with Outlook 2003. How do I get Outlook 2003 to become
my email software again?
