How do I get only nonbreaking spaces within french quotes « » ?

I can't do a search «^w and replace with «^s because I then get
"^s, i.e. Word doesn't seem to recognise the french quotes « even if I set to
french language in the text and in the search and replace function.

I want to avoid replacing hundreds of these manually.
 
If you have typed the text in Word, allowing AutoFormat As You Type to
convert " to guillemets, the spaces (which are inserted automatically) will
already be nonbreaking ones.

Use the WildCard option in the Find/Replace dialog.
The wild card option will distinguish between the three types odf quotes («
“ ") and the same for the closing quotes.
The WildCard optin also differentiates between normal spaces and non
breaking spaces...

Entering the associated alt code, by pressing <Alt> + code on th
numerical keyboard, works for me. E.g. for è = <Alt> 138
