I noticed that my timestamp on emails I receive is one hour slow and on
emails I send it is one hour fast. I've already checked to be sure my
computer's clock is correct (east coast time) and I've even "reset" it to be
sure. Unfortunately, nothing has changed. I've also confirmed that the
server I'm downloading my mail from (a university server) is on the correct
time and it is. Any ideas?

Thanks!

Daylight savings time is set correctly in your system clock?

Try looking in Tools | options | calendar options - check the timezone &
daylight savings time.
