how do I ensure Outlook use Office and not viewer?

We use Outlook at work through Citrix and every time I open an Office
document from an e-mail it defaults to viewer.

How can I ensure that Outlook uses my (installed) Office products instead?
 
Assuming I understand the question correctly, you would want to talk to the
folks that run the Citrix server to see if they support opening doc, xls,
ppt, in their respective applications.
