how do I edit pick list for new messages

When I start typing an email address for a new message a list appears of
posible addresses, How do I edit this list?

To remove names from this list you can start typing and when the list comes
up you can scroll down using the arrow keys and then hit the delete button
and the highlighted name will be removed from the list. To my knowledge
there is no way to edit the entire list.
