How do I create a standard doc with fields to prompt me to enter t

I need to create some standard letters which will bring up prompts for me to
enter info such as the addressee, the salutation, the price of the service,
the date of the service etc.

I have done this for years in wordperfect using keyboard merges but have
totally failed in Word (Office 2003).
