How do I create a template for form letters?

Many years ago, I used Word Perfect. In that software, you could create
bookmarks that we already inserted into text. Then, you were prompted to
fill in the bookmarks and they would automoatically insert into the document.
So, I would type in the person's last name and it would show up as the
person last name in the address block and the salutation. Is there a way to
do this in Word 2007?
