How do I create a sorting field that I can type in?

I used to be able to add a field (using "Field Chooser" tool) in my Inbox so
that I could sort messages by the project that they related to. I have just
reinstalled Outlook 2003 and I cannot get this feature to work again. I can
make the custom field "Project" appear, by I cannot type in the field to
assign a project name.

You need to turn on in-cell editing. View | Arrange By | Current View |
Customize Current View | Other Settings.
