How do i create a composite character

Is it possible to create composite characters? I am edititng some Hindi
mantras and would like to know how you would put a dot over an M or under an
S to display the proper procunciation.
 
See http://sbarnhill.mvps.org/WordFAQs/Overbar.htm, but note that the Latin
Extended Additional character set in Arial Unicode MS includes characters
with dots over them.

Tony and Suzanne thank you so much. Suzanne's tutorial was easy to follow
and it allowed me to do exactly what I wanted.
