how do I convert my Outlook to Outlok Express ?

You can't. They are programs. You can't "convert" one program to another.

I PRESUME you mean transfer your Email from one to the other.
In Outlook Express, go to File-Import

Configure Outlook Express. Then, click File>Import>Messages. Choose
Microsoft Outlook and click Next. Select the folders you want (or choose
the All Folders option). Click Next. When the import stops, click Finish.
Note that this will also import your Calendar, Contacts, Journal, Tasks,
Notes, etc. folders, but they're useless in Outlook Express, since Outlook
Express can handle only mail.

To import your Contacts into the Windows Address Book, which is where
Outlook Express wants them, you can create a Personal Address Book in
Outlook, copy your Contacts to it, and then import that in Outlook Express
with File>Import>Other Address Book.
