How do I convert all words in a paragraph to a list one on top the other?

I wish to be able to put all the words in a paragraph or may paragraphs into
one list in so that I can enter them one on top the other in Excel.

You could find and replace every space with a paragraph mark.

Edit | Replace.
Find box: just type a space
Replace box: enter ^p
Replace All.

You might test ON A COPY just in case it doesn't come out as you want.

PS. Typing the date and time for your zone at the top of your email doesn't
really make sense in an *international* forum. You can safely assume that
all forums like this timestamp the messages. (Actually, it probably never
makes a lot of sense with email, but especially not with an international
audience).

Use Edit > Replace to replace all spaces with paragraph marks. In the
Find What box, enter a space character. In the Replace With box, enter
the code ^p for a paragraph mark. Click the Replace All button.

Probably you also want to use Replace to remove all punctuation.
