How do I control which SMTP server mail is sent through?

Is there an easier way to control which SMTP server I send mail through than
to go into the accounts set up to change the order of the mail connectors
and then opening up a new form after making the change and then going back
into the accounts set up to change the order back to the way I want mail to
go out by default.

I sometimes send mail to people I do not want to see my regular email
address, and I sometimes correspond with people who will not accept mail
from outside SMTP servers like my regular SMTP service.

If the way I'm doing it it the easiest way, please confirm that the point at
which the outbound server is determined is the moment a new form creates a
new message. In other words, if I open a new message and then change the
mail service order, the change will not affect the message I have opened
even if I close and reopen the message in Outlook. Is that right?

Why not simply use the Accounts button near the Send button to select which
account you want to use for that message?

A new mail is sent from your default account, a reply is sent from the
account it was received on
But you have the option as outlined by Roady
