This doesn't have anything to do with Microsoft Access, the database
software which is the subject of this newsgroup. But... to answer...
*you can't*. A scanned image is NOT text; it's just a picture, black
dots on a white background.
You need to run it through "Optical Character Recognition" software to
(more or less accurately) perceive that this pair of diagonal lines is
a letter V and this oval is either a letter O or a number 0.
