How do I change a Task Due Date - AFTER I have assigned it?

I have set and assigned Tasks to my employees. Due to priority changes, I
want to be able to change due dates.

Once someone has accepted a task assignment, the original task can only be updated by that other person. You'd need to either create and assign a new task or send the other person a mail message requesting a change in due date.

I don't believe that's possible. Once you assign the task, you no longer
have permission to it.
