How do I capture e-mail addresses automatically

In an older version of Outlook Express you can automatically put people you
reply to in you address book. How do you do this with Microsoft Office
Outlook 2003. It is important for my company to be able to automatically
capture every e-mail address we reply to if we don't already have it. Any
suggestions would be greatly appreciated.
