How do I automatically change font color replying to email?

When I relpy or forward an email, the font color automatically changes from
the color in the original email. I want to stop this function because I
don't like some of the colors that are automatically selected, but I can't
find the place where the function can be selected.

What email app, what Word version are you using and what are the steps you're using for reading/replying to the email?
