How can outlook use default paper size (A4) for incoming mail?

When I receive plain text messages, that I want to print out for later
reference, they insist on being printed on letter size paper. (Which I don't
have).
When I change the setting to A4, it appears that this will change my default
e-mail template. (I normally accept this).
Why does the next incoming message then change the default template back to
letter size paper again?
