How can I view the folder size and number of emails per folder in the Folder
List pane?

You can't. You can view the folder sizes by right-clicking on the folder
(or the PST name), choosing Properties, and clicking Folder size. You can
view the number of items in a folder by enabling the status bar and clicking
the folder.
