How can I hide tasks that are completed?

Brandi, the easiest way is to use the "Active Tasks" view for your Tasks
(View > Current View > Active Tasks; in Outlook 2003: View > Arrange by >
Current View > Active Tasks). That will hide (filter out) any task completed
before today.

Alternatively, you can apply a filter to the current view. View > Current
View > Customize Current View > Filter > Advanced. Define the following
criteria: Field = % Complete; Condition = not equal to; Value = 100. Add the
criteria to the list, then OK your way all the way out.
