First go to Office button > Word Options and check the option to display the
Developer tab in the ribbon.
On that tab, click the first or second button in the Controls group. The first
one (Rich Text) allows entering formatted text such as bold or italic. The
second one accepts only plain text.
This does assume that all users will have Word 2007. If that's not the case,
then the legacy form fields would be a better choice. For more on those,
