How can I change the way completed tasks are formatted?

I would like to get rid of the strike through so that I can more easily
review the tasks I have completed. Is this possible?

No, it's not.
 
Go to "customize current view". There is a button for Automatic Formatting.
You can use this to change the way that completed items are formatted.
