How can I change the subject of somebody's message?

I would like to categorize the messages in my inbox. I would like to mark
some important messages by giving some valuable name. I don't want to create
a new folder for it and move it, I just want to rename it so I know exactly
what was this message about.

I can't edit the subjects of the received messages!!!!
I can open it, but it allows me to edit the body of the message, not the
subject.

What version of Outlook and what mail account type are you using?
