how can I change the Outlook 2007 toolbar color?

I hate the pale blue but can't seem to figure out which change in the Display
category I have to change to get this toolbar to change. Help?
 
In Outlook, Tools->Options->Mail Format->Editor Options. Choose from Blue, Silver or Black.
