How can I change a Word document file icon?

I want to change the icon on a single Word document file so it is easily
recognizable in a list of other Word documents. How?

You can't. The icon is actually not part of the document. Windows
Explorer decides which icon to display by checking the application
that will open the document and ask for the 'correct' icon there.

Actually you can, by utilising the Windows function that you describe.
Rename the document to filename.zdoc associate zdoc with Word and apply an
icon of your choice to that file association.
