Is there any way to print out a list of installed updates? Both the
list in add/remove programs and the update history under windows update
do not seem to provide any printing capability. I have tried copying to
the clipboard without success and prnt scrn was no go.

There is a better way. The Registry has a key entitled "Hotfix:"
All the installed updates and patches are listed under this key. You
can export the Hotfix key to a .Reg file. This is a simple text file
that you can send to your printer. It will also contain data on when
the updates were applied.
Regedit is accessible by clicking Start\Run type Regedit
Click Edit, Find enter Hotfix, when the key is located, simply go to
File and click Export and pick and name and location for the file
to go to.

print screen = alt+print scr in active window and right-
click/paste into "wordpad".....print wordpad document.

is your list that long? 30+ entires?
i opened textpad and typed the list in and printed list.
