Highlighting new emails in subfolders

I have rules that move emails from the Inbox, to various folders. These
folders may have subfolders under them.

When new emails come in and get moved into the subfolders, I have no way of
knowing that since the folders are not bolded like the top level ones.

Is there a way to do this?

Depending on your version of Outlook, which you didn't tell us, use the
Unread Mail Search folder in the Favorites Pane.
 
Sorry, I am using both 2003 and 2007.

I know about the Unread Search, but I have lots of subfolders. Do I need to
create a search for each one?

No. The Unread Mail search folder will (by default AFAIK) show ALL unread
mail in the pst file, sub-folders and all. The column headed "In Folder"
will show you what folder the unread mail is in.
 
The folder should be bolded if it has unread messages in it. It may not
expand so you can see it - and if you use nested folders, they may not
expand automatically when new mail arrives. (This is one reason using rules
to move mail is not a good idea.)

Use search folders to search the entire pst for unread messages - this
should be the default for the Unread folder outlook includes.

The Unread Mail folder shows ALL the unread mail. I want to see the
subfolders and determine which ones got new email so I can narrow my reading
to the ones I need to.

Sort the Unread Mail view by the "In Folder" column....
