Hide note pages

I want to hide notes pages when giving a presentation. When saving as a .pps
or web page, the notes pages are hidden, however, if you launch powerpoint
and then open the presentation, the notes pages are visible. Don't want that
to happen.

Do you mean that you want to remove the notes text before distributing your
PPT/PPS file to others?

Delete notes page text (or text and shapes)

Not really delete. Still want the notes pages there for future use. Don't
want the recipients to see them.
 
You really do want to delete them; you just want to delete them from a
copy of the original. That is, make a copy, delete the notes, distribute
the copy, and keep the original.

Not really delete. Still want the notes pages there for future use. Don't
want the recipients to see them.

Then as David says, you'll have to keep two copies of the presentation, one for you,
one to distribute.
