Hide header when sending?

Is it possible to change or hide my header address information on emails that
I send? I know you can choose which profile/name to send from - wondering if
there is a way to be more anonymous - and/or have ONLY the email address and
no first, last name or initials appear, etc. I use many email accounts and
they all direct through the one default that shows my name, that default
address (which I don't want people to see) the sending email address that I
choose and the name associated with the sending address. I want to minimize
all of this and have ONLY one, chosen email address appear in the header and
NOTHING else on email that I send. Suggestions? Thanks....
