Probably something like TrueCrypt for really serious security. Not
only hides and encrypts, but gives no real evidence the files are even
there. Not a dead simple thing to set up, but quite powerful.
I'd create another partition, put the files on that partition, then
delete the partition information. If you leave some space between the
real partition and the "hidden" partition, finding the hidden one is
about as easy as finding anything else that doesn't exist - it depends
solely on being very lucky, and that kind of luck will defeat any
encryption scheme.
