Having text automatically populate in MS Word

I'm attempting to create a letter template (in MS Word), where the contact name in the contact information section (Contact Name, Street Address, City, State & Zip) will automatically populate in the space after "Dear ___________," and then to have two timeframes - one the date of the letter (I can do this) but the second to be 14 days after the first one. Say "December 10th, 2003 to December 24th, 2003" where the 24th automatically populates.

Any ideas?
