actually you should be admin every time you open computer
if it is stand-alone single-user.

make desired changes

How do I get rid of that screen? I "inherited" this one and
the last person's name is everywhere. Is there one place I
can go to and erase all instances of that name?
You will not be able to erase that name, though you can delete the old
account and change the ownership. Some programs installed under that name
will always remain so. Only way around is to start clean.
