freezing cell values

can any one please advise.
I want to record over a six week period the number of hotel bookings.
so in week 1 I will show bookings received for week 1 plus weeks 2 -7. how
can I freeze snap shot values for the individual weeks so that as the weeks
progress I can still look back and see the state of bookings as they were in
any particular week the object being to measure how far ahead people are
making bookings in different parts of the year.
 
Have 3 date fields...
Reservation Date
Start Occupancy Date
End Occupancy Date

This will allow you to create stats such as Length of Stay, # of days booked
in advance, Season Length of Stay, etc.
