Forms Toolbar in Word 2007

I have several docs that were saved in Word 2003 using "Forms" - with
checkboxes and drop-down lists.
I see that the "Forms" toolbar has been removed from Word 2007. Is there
anything there to replace it, i.e. can I use the 2003 documents with
checkboxes/ drop-downs on Word 2007?

In Word 2007, Click on the File button, then on the Word Options button on
the bottom border of the dialog and then select Developer from the Choose
commands from pull down, then locate the Legacy Tools item and click on the
Add button to add it to the Quick Access Toolbar. When you do that, you
will be able to insert the FormFields that you used in Word 2003 and earlier
versions. To protect the document for forms, go to the Review tab and the
click on the Protect Document button to display the Protect Document Task
Pane which is similar to that in Word 2003.

I just finished reading about the complete lack of toolbar customization in
2007. Previously I could right click and display the Forms toolbar, then
right click to get rid of it. Now, since I can not create a custom toolbar,
I have to go through several steps to display then, since once I've created
the form I won't need the options, I have to go through several steps to get
rid of it. Every time. And this is supposed to be more efficient?

I'll be sending a frown on this one....

MS never claimed that the ribbon UI is more efficient to work with.
Rather it allows people to easier find stuff and use more sophisticated
features.
The MS math is that the productivity gained by making things easier to
use and by providing more sophisticated features to more users makes up
any loss in efficiency one might experience.
