Forms and Spam

Over the last few months the problem of forms being completed with spam has
started increase on all the sites I have.

I am well aware this has been brought up before....I am not to worried about
spam going to the email address on the form but am about the spam being
"posted" on the form.

On one site I have a complex form with many details to be completed from
drop down box. The first option is always set to something "choose from the
list below" and this choice is always set to "disallow first choice" and
consequently no spam filled forms seem to be received.

Do you think this would be stopping the spam and the form must be completed
with an option other than the first on the drop down?
