formatting for new email signature different than forwarded email

I am having problems keeping my formatting the same on new email signatures.
My email signature is different than my forwarding email signature. I like
the forwarding signature and would like to keep that format all the time.
The email signature spaces the signature out with extra breaks between lines
like below.
My forwarding email keeps them together tight one under another. What gives?

Check the HTML source of the signature.
Paragraphs have additional "linebreaks" and are created by <p></p>
A normal linebreak is create by a <br> tag

When creating the signature with Word as the Advanced Editor is is the
difference of using an ENTER (<p></p>) or SHIFT+ENTER (<br>)
