Format e-mail

I am having trouble getting my Outlook to stay at the format that I need.
When I start an e-mail the format automatically goes to format of
"Paragraph", I need it to be "Normal". I can't seem to figure out how to
change the format and save it.

Any suggestions greatly appreciated.

The 15 Outlook groups all start with microsoft.public.outlook.
