font size and style changes

I recently had to change a name on the letterhead of a "protected" document
that I can tab through the fields and fill them in. When I made the change,
I then protected the document. However, now the font size and style changes
to a very small font size and a style different than the saved and protected
file. I cannot get it to stay the same as it was in the past. I have to
unprotect each tab, highlight, change size and style on each field I need to
add data.....It takes forever to do so and is time wasted in the work place.

I thought it was because the original document was 2003 and I am not working
in 2007. So I recreated the document in 2007 and it still changes! HELP!!!
