When I open a file in a media player or editor the default has them listed as
thumbnails. I change it to list, but when I try to open another file it goes
back to thumbnail. Is it possible to change the default to the list format?

In Open file dialog box you may try Setting the View to to List, then
hold down CTRL and click the X to close the Window and save the layout.
