Flagging items in 2007

In outlook 2003, when you flagged an item, you could edit the comments
specific to each message - i.e. yellow flag, but the title of the flag could
be as specific as, 'Fwded to Accting, called Joe on 4.13.08, waiting on
response'.
Now my office has upgraded to 2007 and I can't find a way that lets me write
notes directly on the email itself. I don't want to add a note to the folder
since I'd need something to remind me to go search for the note, and the
flags and catagories both seem to be static, unless I'm missing something?
Is there any way to write comments specific to one email, and have those
comments open every time you open that email?
Any help is most appreciated!
