Using the sharedFax on our windows server, how do I see
the company name instead of the First and Last name when
I try to fax someone. I am using Outlook 2000. If anyone
knows of any plug-ins please advise.

Specify your Fax software more clearly and what repository it is using for
fax addresses.
The Outlook Address Book can be configured to sort by your File As field. Is
your File As field configured to show the company name?

Windows Fax Server. My File As field ins configures to
show the company name, yet I see everyone's full name
instaed of company...

Then set it to use the File As field instead.
Tools menu > Services > Highlight the Outlook Address Book service > Click
Properties > Set sort order
