Out of the box analog fax modems are supported (consumer kind) as well as
multiport fax boards like MultiTech ISI5634 or Comtrol
Also Brooktrout TruFax and TR114 (again, out of the box).
Finally, you could take a look at Eicon. They seem to have a wide range of
boards supported for MS Fax on Server 2003 - from 1 port analog to T1 PRI
ISDN

Sorry, not sure about that. I just kept collecting bits and pieces. The API
is described in MSDN rather well. As for the administraiton - try Technet
and various SBS sites. Apparently SBS is one of the major scenarios for W2K3
