I want to undo all changes made to a work sheet, the undo
button will not undo them all. I WOULD LIKE TO GET BACK TO
THE ORIGINAL DOCUMENT

If you saved it then your only recourse is your backup file.

If you did not save at any point, close file, do not save and then reopen

There are things that kill the undo stack (like Frank, Don, and Lady Layla
suggested).

But you can increase the number of undo's, too:

xl2k and above

But these won't help when you do something that kills the undo stack.
