(1) If I click paste and choose picture of table from the paste options, I
won't get the gridlines and the table doesn't look appealing.

(2) If I do paste special > paste link, then right-click on the object and
click update link, I get a table (OLE linked object) with gridlines. Then
if I ungroup, I get a picture of a table (OLE embedded object) with
gridlines. This looks much nicer than the end result of (1) above.

Don't know if both pictures are of the same size. Wonder if #2 will be
bigger because of linking and ungrouping?

I started a thread on 6/26 regarding a problem with gridlines when doing
paste link. I have to click "update link" to get the gridlines.

Did I miss something important? Any comments?

Usually #2 will be smaller (vector graphics rather than a bitmap picture)
But if it's a concern, it's best to test with your own particular mix of Excel
sheets.
