Excel 2007 encryption

I am having difficulty finding information on the Excel 2007 encryption
setting.

Issue#1: When I am saving a file in the legacy .xls format, where do I find
the advanced option that lets me choose the encryption type? I always want
something more powerful than the default Office 97/2000 Compatible type.

Issue #2: I understand I can change the default encryption type in Excel
2007 by using the "Office Customization Tool" What is the default
custmization type? Is there any other than the Office Customization Tool to
change the encryption setting for individual documents?

I believe that was removed from Excel 2007.

The Tool just makes an entry in the registry. You could do the same
manually and it would be in force until you set it back. You could write a
macro to make the registry entry, save the file, and set the registry back.
I think this would take effect without restarting Excel but I'm not
positive.
